Why a parotta is layered, and how it gets that way
How a maida dough is kneaded, rested and rubbed with oil until it will pull into paper-thin sheets, why those sheets are coiled or tossed into layers, and where Malabar, Kerala and Tamil Nadu's veechu parotta actually diverge.

A chapati is flour, water and salt, rolled once and cooked once. A parotta starts as the same basic dough, with oil worked in, and is turned into many separate sheets before it ever touches the griddle. The shatter when you break one open, the way a torn piece pulls apart into threads rather than crumbs, and the clap a cook gives it before handing it over: each of these follows from a short, deliberate sequence. Build the gluten. Let it go slack. Trap oil between the layers it has just relaxed. Then use force to prise apart what the oil has already loosened.
The flour is maida, refined wheat flour with the bran and germ removed, not the atta that goes into chapati and most north Indian paratha. Oil, water and salt are added to it in fairly settled proportions across the trade. What happens to that dough over the next several minutes decides whether the finished bread comes apart in flakes or sits there dense and rubbery.

Kneading builds a net you will later have to loosen
Wheat flour's two main proteins, glutenin and gliadin, do nothing on their own. Add water and work the dough, and glutenin molecules cross-link through disulfide bonds into a network, with gliadin filling the gaps and giving it stretch. The longer and harder a dough is kneaded, the denser that network becomes, and the chewier the cooked result. For most breads this is the whole goal. For parotta it is only the first half of the job, because a tight gluten network is exactly what stops a sheet of dough being pulled thin. It springs back instead. So the dough is not simply kneaded and rolled. A portion is beaten and stretched by hand until it turns pliable, work that shapes the eventual texture of the bread as much as the rolling does, and only then is it set aside.
The rest
Food-science accounts of the Kerala process put the rest after that beating at about five minutes. The point of pausing is not idleness. A gluten network that has just been worked hard is under tension, and tension resists stretching. Left alone, even briefly, the network relaxes, and the dough shifts from merely elastic to properly extensible. Bakers rely on the same effect elsewhere, letting a bread dough sit before shaping it into a long loaf that would otherwise fight back. Recipes for parotta disagree on exactly how long that rest should run outside the research literature; some cooks give it a few minutes, others considerably longer. What none of them dispute is the direction of the effect, only its duration.
Layering with oil, not steam
Puff pastry gets its layers from butter that turns to steam in an oven, forcing sheets of dough apart as it escapes. A parotta has no oven and produces no such lift. It lies flat on a hot griddle, and the oil in it never leaves. Instead the oil does two jobs. A small amount is worked into the dough itself, and a slick of it is brushed over the rolled-out sheet before that sheet is folded or coiled. Fat physically coats the gluten strands and sits between them, and it also blocks the disulfide cross-links that would otherwise let adjoining layers weld back into one solid mass under heat. The oil is doing on a griddle roughly what butter does in an oven: keeping the network open long enough for separate sheets to stay separate.
The coil and the cut
In Kerala's standard method, the oiled sheet of dough is gathered into a rope, wound into a spiral, and then flattened again into a disc. Before that final flattening, the coil is sliced through rather than simply pressed down. That single step is why a well-made parotta shows its layers as a ring across the surface rather than as a plain, featureless disc: the knife exposes the cross-section of the coil, and that cross-section becomes the face that meets the griddle. Skip the cut and press the coil flat instead, and the surface stays smooth even though the inside is still layered.
Kerala porotta and Malabar parotta: the same bread, different name
This is worth stating plainly, because menus outside Kerala often imply otherwise. The parotta usually sold as Malabar parotta and the one Kerala calls porotta are the same bread, made the same way: dough sheeted with oil, gathered into a rope, coiled, cut and rolled flat. "Malabar" names the coast most associated with the dish outside the state; "porotta" is simply the Malayalam word for it inside Kerala. Neither label points to a different fold count, a different oil ratio, or a different rest. A cook who makes the coiled, cut version is making the same bread whichever name ends up on the board outside.
Where the real split happens: veechu and kothu
The genuine technical divergence in South Indian parotta-making sits between that coiled Malabar or Kerala method and veechu parotta, the version associated with Tamil Nadu and Sri Lanka. There the dough is tossed and worked out by hand rather than gathered into a spiral, stretched thinner than a Malabar sheet, and then folded into a square. Veechu parotta ends up with more layers than a Malabar one and looks nothing like it on the plate, flat-edged rather than ringed. Kothu parotta is a different matter again, a serving style rather than a dough method: a cooked parotta of either kind is torn into pieces on the hot griddle and mixed through with egg, meat, vegetables or onion.

The slap, twice
Force gets applied to this dough at two points, and both get loosely called slapping. The first comes before the rest, when a portion of dough is beaten and stretched by hand to make it pliable. The second comes after the parotta leaves the griddle, when it is pulled and worked between both hands, the clapping motion recognisable at any parotta stall. It is this second action, not the cooking, that finally separates the sheets the oil kept apart while they cooked. Heat alone softens the layers; the hand does the work of pulling them loose from one another.
A parotta made with the same flour, the same rest and the same oil, but never clapped after cooking, will still taste right. It just will not come apart the way the one at the stall does.
